Chris Elford is a Seattle-based bar owner and bartender. He is a Certified Cicerone beer expert, a graduate of the Bar 5 Day program in cocktails and spirits with the Bar Ready distinction, and holds the Level 2 Award in Wines from WSET.

Though he grew up in the States, he is originally a son of Windsor, Ontario. He cut his teeth at New York's Amor Y Amargo before opening the famed NYC beer bar Proletariat in 2012. In Seattle, he worked as a brand ambassador and educator for spirits brands like Beefeater & Tequila Ocho, and he tended bar at Canon and Rob Roy.

In 2016, he and business partner Anu opened No Anchor, which was named Seattle's Best Restaurant and garnered a James Beard nomination for Best New Restaurant in America. In 2017, the pair opened Navy Strength, which won Best New US Cocktail Bar at Tales of the Cocktail. The following year, they opened the natural wine and oyster bar Vinnie's, and in 2022, Chris opened the waterfront brewery Here Today Brewery & Kitchen, where he currently bartends. He is also a proud dog dad to an adorable one-eyed Shih Tzu named Blooper.

Camper English is a cocktails and spirits writer and speaker and a huge nerd. She's bartended at some of Chicago's top bars including Moneygun, GreenRiver, Billy Sunday, and The Office at Aviary. She currently leads the team at Hawksmoor Chicago as their lead bartender, and executes innovative cocktail pop-ups in her spare time.

She was previously co-chef of Private Dining Room SF and is a partner at OWL Bakery in Asheville, NC.

Courtney holds an MBA with a concentration in Organizational Development from the University of San Francisco, a Masters Certificate in Hospitality Management with a focus in Foodservice Management from Cornell University, and is currently pursuing her Ph.D. in Leadership at Gonzaga University.

Rosie Grillo, Project Director, Pilot Light Consulting
Rosie Grillo began her career bartending at the Whiskey Flat Saloon in her hometown of Volcano, CA. In New York City, she opened EMM Group's original Catch as head bartender, won Best Team at the Spirited Awards for Holiday Cocktail Lounge, was voted one of the top 50 Bartenders by Time Out NY, and was a Speed-Rack contestant.

Rosie was most recently the General Manager at Point O’ Woods in Fire Island, New York and is now working on an Amaro with natural winery, End of Nowhere, in Amador County, CA.

Miranda Escalante, Beverage Development & FOH Operations, Pilot Light Consulting
Miranda Escalante worked in Asheville, NC, as the General Manager of Edison Craft Ales + Kitchen, as the Beverage Director and General Manager of the Montford Rooftop Bar, and on the bar team at Avenue M where she worked to revamp the bar program to match their Wine Spectator Award winning wine program. She is co-founder of “Purple Teeth,” a pop-up wine club.

Miranda is now on the steering committee of Asheville’s chapter of Restaurant Workers United and is pursuing her WSET (Wine Spirits Education Trust) Level 2 certification.
